Purchase and intake of vegetables and processed vegetable products and perception of foodborne illness risk in Korea

Abstract

|
An online survey was conducted to investigate the purchase, storage, and consumption patterns of raw and processed vegetables, along with the associated risk perceptions in South Korea. Of the 1,201 respondents, 73% purchased raw vegetables within one month, with unwashed and washed onions being the predominant choice. The highest intake rate per person per day was for onions (0.59), followed by napa cabbage (0.45), tomatoes (0.37), and iceberg lettuce (0.37). Purchases of processed vegetables were led by salads (56.5%), meal kits (49.9%), and squeezed vegetable juices (39.9%), with a preference for iceberg lettuce in salads and tomato juice. Although meal kit vegetables are often linked to foodborne illness (58.1%), instances of illness were more commonly associated with salad consumption (30.0%). A substantial majority (75.8%) expressed a need for ¡®education or guidance on how to wash and disinfect vegetables¡¯ through public channels.
